Paleo "T-Rex Tracks" Chocolate Cupcakes

Making paleo treats for kids can be a challenge, but we've got a simple and fun recipe that will give your kids a roaring good time!

Paleo "T-Rex Tracks" Chocolate Cupcakes


  • 1 package of Paleo Chocolate Cake and Muffin Mix
  • 6 eggs
  • 1 cup liquid coconut oil (melted in microwave on high for 60-90 seconds)
  • 1 cup honey
  • 1/2 cup water
  • 1/2 cup finely shredded unsweetened coconut (we used this)
  • 1 sheet of wax or parchment paper, to make T-Rex track stencils.


  • Make Paleo Chocolate Cake and Muffin Mix according to directions on label, and fill 15-18 cupcake papers with batter in muffin pans.  Bake at 350 degrees for 20-25 minutes until done.  Remove from oven and let cool completely.
  • While chocolate cupcakes are in the oven, free hand draw or use below image to stencil a T-Rex track on wax or parchment paper.

To print stencil, right click > Save as > SAVE > open file and print.

  • Carefully cut out stencil with scissors.  You can use both the inside piece (cut out) or the outside piece (paper with cut out removed) to stencil on your cupcakes, depending on your preference.
  • When cupcakes are cool, place T-Rex stencil flat in the center of a cupcake.  You may need flatten the stencil with your fingers if the edges start to curl up.
  • Using your fingers, sprinkle shredded coconut evenly over cupcake until covering all exposed surface area.  Gently lift paper stencil off of cupcake to reveal your T-Rex track! 
  • Repeat stencil on remaining cupcakes. 

Tip: If coconut does not stick to cake surface, you may need to lightly mist with water using a clean spray bottle or a brush. 

This fun T-Rex shape can be created using cocoa powder, cinnamon - whatever your heart desires!
