Maple, pumpkin, and cookies? Oh my!
Don't judge us. The Paleo Baking Team is in full pumpkin spirit right now, and we may be just a little excited that it's peak pumpkin season. Seriously, if you haven't seen our Paleo Pumpkin Spice Latte Muffins recipe, you for real need to go do that. Like, right now. It's fantastic.
We took our popular Paleo Vanilla Cake and Muffin Mix and turned it into cookie dough. It's like we're magicians or something. This is a really easy recipe, and it makes a delicious paleo cookie with all the tasty flavors of fall.
In an attempt to showcase just how versatile the PBC Vanilla Cake and Muffin Mix can be, we put it to the test. Our hope was to create a delicious, moist pumpkin cookie, and we believe that we did just that. This cakey cookie is the perfect little paleo treat to warm up your kitchen on a cool, fall day. Plus, your house will smell amazing.
The key to this recipe is to roll out the dough between two sheets of parchment paper on a baking sheet. You have to chill the dough to keep it from falling apart before baking. Expert baker tip: chilling your cookie dough right before baking also helps the finished cookie keep it's cookie cutter shape. Neat, huh?
Once your cookies are out of the oven and completely cooled, feel free to frost with a little melted chocolate or cacao. You can also dust them with some maple sugar for a sweet crunch. Serve with a tall glass of milk (er, coconut milk?) and enjoy!
