Paleo Green Chili with Pork

When the weather gets cold it's comforting to prepare warm soups, stews, and chilis. Green chili (Colorado green chili or chile verde as its sometimes called) is a perfect meal when the snow is piling up outside and you want to stay home and snuggle.

The best thing about this green chili recipe is that it's quick and easy to make. Once the aromatic mix of chiles, chicken stock, pork, and spices is bubbling on the stove top you'll be treated to a stomach-enticing scent that will be hard to resist.

This paleo chili recipe is easily modified to your personal taste. You can replace the pork in this recipe with another meat such as diced chicken, turkey or beef. 

If you want to make a keto green chili and keep the carb count low, just omit the cassava flour. The chili will be a bit thinner without the cassava as a thickener, but it will definitely taste just as amazing.

Paleo Pork Green Chili Recipe

Paleo, gluten free, dairy free, and refined sugar free

Makes approximately 8 cups, or 8 servings.


  • 1/2 pound pork chops or pork shoulder
  • 1 cup chopped onion
  • 1 tablespoon grass fed butter or coconut oil
  • 12 ounces canned green chilies in water
  • 28 ounces petite diced tomatoes
  • 6 cups chicken broth
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 2 teaspoons sea salt
  • 1 tablespoon cassava, tapioca or arrowroot starch/flour + 1/4 cup water
  • Optional: diced avocado


  1. Cut pork into small 1/2" square pieces.
  2. Melt butter over medium high heat in a large pot or dutch oven. Brown pork pieces in butter, stirring regularly to prevent sticking.
  3. Add remaining ingredients to pot. In a separate dish, mix together cassava/tapioca/arrowroot starch and water until there are no lumps. Stir into the green chili to thicken.
  4. Bring to a boil over high heat. Once bubbling, reduce heat to low and simmer for 30 minutes.
  5. Serve hot, garnished with diced avocado if desired.
