Which apples are best for baking?

You can choose any apple variety for baking, but the best apples tend to have a firm flesh so they don't dissolve during the baking process. Great baking apples also have a sweet but mildly tart flavor so the essence of apple can compete with other flavors in a recipe. Great apples for baking include the classic Granny Smith, but other family favorites like Jonathan, Braeburn, Melrose, Courtland, and Honeycrisp work just as well.


Paleo Apple Cinnamon Cake Recipe

Paleo, gluten free, dairy free, and refined sugar free

Makes approximately 12 servings


  • 1 bag Paleo Vanilla Cake and Muffin Mix
  • 6 eggs
  • 1 cup coconut oil, melted + 1 teaspoon for greasing pan
  • 1 cup honey
  • 1/2 cup water
  • 2 tablespoons vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 cup peeled and cored apples, coarsely chopped


  1. PREHEAT oven to 350 degrees.
  2. GREASE the bottom and sides of the cake pan(s) with 1 teaspoon coconut oil and set aside. (Use muffin cups in two standard sized muffin pans if desired).
  3. In large mixing bowl, combine all wet ingredients (eggs, coconut oil, honey, water, and vanilla extract).
  4. Once thoroughly combined, add in the baking mix and cinnamon. Stir on high for 2 minutes.
  5. FOLD in chopped apples.
  6. POUR mix into pan(s) and follow baking instructions below.
Baking times may vary:
  • 2 9" pans: 25-30 minutes
  • 13" x 9" pan: 30-25 minutes
  • 4 mini loaf pans: 35-40 minutes
  • 20 muffins/cupcakes: 20-25 minutes
