Creamy Paleo Basil Pesto

Finally!  Springtime in Minnesota!  After several snowstorms dumping 5-10 inches of snow (as recently as April 22!) things are finally starting to warm up.  In honor of the warmup, I am inspired to make an old favorite recipe of mine (this is a repost) Creamy Paleo Basil Pesto.  Enjoy!

Creamy, vibrant, basil pesto pasta…

Perfection on a plate.

I’ve tweaked the recipes of others who have created versions of this incredible paleo dish. This is a guilt-free recipe that will impress your family and friends… if you don’t eat it all yourself first!

Creamy Paleo Basil Pesto

  • 1 cup loosely-packed, fresh basil
  • 2 medium avocados, skins peeled and pit removed
  • Juice from 1/2 fresh lemon (about 2 tablespoons)
  • 3 cloves fresh minced garlic
  • 1-2 teaspoons sea salt (or to taste)

Blend all ingredients in a food processor until creamy.  Toss with your favorite paleo “pasta” (spaghetti squash, zucchini/carrot noodles, etc.), vegetables, or use as a sauce for chicken or fish.  Viva la paleo!
