Paleo Roasted Garlic Mashed "Fauxtatoes"

This recipe is easy.  SUPER easy.  And delicious!

Paleo Roasted Garlic Mashed "Fauxtatoes"

Preparation: Preheat oven to 400 degrees. You will need a baking sheet lined with tin foil (unless baking sheet is non-stick), and a food processor or blender.


  • 1 head of fresh cauliflower
  • 10 cloves garlic, whole
  • salt & pepper, to taste


  1. Wash cauliflower and remove stem/leaves.  Chop into 1-inch size florets.
  2. If garlic cloves have skins, remove.
  3. Arrange cauliflower and whole garlic cloves evenly on baking sheet and roast in the oven for 20-30 minutes until golden brown and fork tender.
  4. Puree in a food processor or blender, adding salt and pepper to taste.
  5. Optional: add water, ghee, or olive oil for a smoother consistency.  
  6. Serve hot and enjoy!
