This powerful combination marries the slightly sweet, autumnal flavor of pumpkin with the mild fall flavor of turkey. Turkey is also an excellent low-fat meat substitute for anyone wanting a break from chicken or beef.

Pumpkin Turkey Chili - So Easy!

Paleo Pumpkin Turkey Chili Recipe

From start to finish, this recipe should take you no longer than 45 minutes tops. It's a one-pot dish that is very filling, so no need to serve it with sides. The key is to let the chili simmer and bubble (toil and trouble?) for 20-30 minutes. It may be tempting to spoon some of that happiness right up, but be patient! The sweet, spicy pumpkin flavor will be totally worth the wait.

Note: If turkey isn't your bag, baby, just replace it with beef, chicken, pork or your preferred protein of choice.

 

 

Paleo Turkey and Pumpkin Chili Recipe

Paleo Pumpkin Chili Recipe for Fall

Paleo, gluten free, dairy free, and refined sugar free

Makes approximately eight servings.

Recipe adapted from Trader Joe's

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 white onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic
  • 1 pound ground turkey
  • 1 can diced tomatoes
  • 1 can pumpkin puree
  • 1 cup diced pumpkin
  • 2 teaspoons sea salt
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 bunch of cilantro

Directions:

  1. WARM olive oil over medium-high heat in large saucepan.
  2. SAUTE chopped onions and bell pepper in olive oil on medium-high heat for approximately 3 minutes until translucent.
  3. ADD garlic and ground turkey, stirring occasionally until turkey is browned.
  4. DRAIN excess grease from pan.
  5. Bring pan back to medium-high heat and add the remaining ingredients. Stir until thoroughly combined.
  6. Bring pot to a boil.
  7. Turn down heat to low and allow to simmer for 20-30 minutes.
  8. Top with cilantro and serve!
