Besides the fantastic flavor, the best thing about this mug cake recipe is that it's easy-peasy and leaves no excess dishes! You will only dirty one mug in the making of this recipe. From the melting of the coconut oil and the adding and mixing of the other ingredients straight to the baking of your cake in the microwave, you will only be using ONE mug. Paleo Pumpkin Chocolate Chip Mug Cake Recipe

Easy Paleo Pumpkin Chocolate Chip Mug Cake Recipe

Paleo, gluten free, dairy free

Makes approximately one serving

Recipe adapted from EatGood4Life

Ingredients:

  • 1 tablespoon melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons pumpkin puree
  • 1 tablespoon maple syrup
  • 1 room temperature egg
  • 1/4 cup almond or coconut milk
  • 3 tablespoons PBC Vanilla Cake and Muffin Mix
  • 1/4 teaspoon baking powder
  • 2 tablespoons paleo chocolate chips

Directions:

  1. MELT coconut oil in large mug
  2. STIR in vanilla extract, pumpkin puree, maple syrup, egg, and milk until smooth.
  3. ADD in Vanilla Cake and Muffin Mix and baking powder and stir until combined.
  4. FOLD in chocolate chips.
  5. MICROWAVE for 3 minutes on high.
