Paleo Maple Pumpkin Cookies

Maple, pumpkin, and cookies? Oh my!

Don't judge us. The Paleo Baking Team is in full pumpkin spirit right now, and we may be just a little excited that it's peak pumpkin season. Seriously, if you haven't seen our Paleo Pumpkin Spice Latte Muffins recipe, you for real need to go do that. Like, right now. It's fantastic.

We took our popular Paleo Vanilla Cake and Muffin Mix and turned it into cookie dough. It's like we're magicians or something.  This is a really easy recipe, and it makes a delicious paleo cookie with all the tasty flavors of fall.

Moist, Delicious Pumpkin Cake, er... Cookie

Making paleo cookie dough

In an attempt to showcase just how versatile the PBC Vanilla Cake and Muffin Mix can be, we put it to the test. Our hope was to create a delicious, moist pumpkin cookie, and we believe that we did just that. This cakey cookie is the perfect little paleo treat to warm up your kitchen on a cool, fall day. Plus, your house will smell amazing.

The key to this recipe is to roll out the dough between two sheets of parchment paper on a baking sheet. You have to chill the dough to keep it from falling apart before baking. Expert baker tip: chilling your cookie dough right before baking also helps the finished cookie keep it's cookie cutter shape. Neat, huh?

Paleo + Pumpkin = Perfection

Once your cookies are out of the oven and completely cooled, feel free to frost with a little melted chocolate or cacao. You can also dust them with some maple sugar for a sweet crunch. Serve with a tall glass of milk (er, coconut milk?) and enjoy!

Go ahead. Surprise your family this Halloween season by baking some of these heart-warming, mouth-watering bites of deliciousness. Your family's hearts will be full and their tummies will be happy.

Paleo, gluten free, dairy free, and refined sugar free

Makes approximately 3 dozen cookies

Recipe adapted from Primal Palate

Ingredients:

  • 1 bag of Paleo Vanilla Cake & Muffin Mix
  • 1 cup coconut oil
  • 2 teaspoons pumpkin pie spice
  • 1 tablespoon vanilla extract
  • 1/2 cup organic pumpkin puree
  • 3/4 cup pure maple syrup
  • 2 eggs
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients in a large bowl until thoroughly combined and somewhat fluffy.
  3. Line a baking sheet with parchment paper and dump dough onto the paper.
  4. Cut another piece of parchment paper and place it on top of the dough. Flatten the dough with your hand by smoothing it over the parchment-lined dough. Use a rolling pin or the bottom of a glass and flatten the dough to 1/4".
  5. Chill flattened dough on baking sheet in the refrigerator for approximately 30 minutes.
  6. Remove the baking sheet from the refrigerator and remove the top layer of parchment paper. Use a cookie cutter to carefully cut out cookie shapes. Transfer them to another parchment-lined baking sheet.
  7. Bake cookies in preheated oven for 12-15 minutes or until golden brown.
  8. Remove baking sheet from oven and allow to cool on a cooling rack.

Are you convinced yet of your need to make these cookies? We hope so... enjoy!
