Paleo Cinnamon Chocolate Chip Muffins

We know you've heard of cinnamon raisin, but have you ever heard of cinnamon chocolate? 

Cinnamon and raisin is a very popular flavor (think oatmeal + raisin + cinnamon = awesome), but some folks are just not big fans of raisins. That's totally OK, because it turns out cinnamon pairs even better with chocolate. We've taken the fabulous flavors of cinnamon and chocolate and added them to our Paleo Vanilla Cake and Muffin Mix to create an amazingly tasty and easy-to-make treat!

 

Cinnamon and Chocolate?

Yep! Cinnamon and chocolate. This flavor combination is very similar to Mexican chocolate, but without the chili pepper kick. If you're looking for something sweet and slightly unique, you absolutely must try this sophisticated flavor combination.

Each muffin is moist and tender, with a delicately balanced combination of chocolate and spice. Because it's paleo, you won't have to feel guilty about eating one (or two or three).

If you really want to go the chocoholic route, allow these magnificent morsels to cool all the way to room temperature and then slather their tops with our famous paleo chocolate frosting. Suddenly your muffins are now cupcakes and you're rocking the book club potluck or PTA bake sale. 

 

Cinnamon Chocolate Chip Muffins

This recipe is so easy and quick to mix up! We started with our famous Paleo Vanilla Cake and Muffin Mix. We added 1 1/2 teaspoons of cinnamon and 1 cup of chocolate chips to the batter, then popped the muffin pans into the oven. Enjoying these muffins fresh out of the oven with the chocolate magnificently melting in your mouth is definitely the perfect way to indulge. These cinnamon chocolate chip muffins also make an amazing after school snack for kiddos.

Baker's Tip: You can freeze these muffins in an airtight container for up to four weeks. Just take them out of the freezer to thaw for a few hours before you want to serve them, or you can microwave them right out of the freezer for 20-30 seconds for a warm and comforting muffin. Yummy!

 

Cinnamon Chocolate Chip Muffins

Paleo Cinnamon Chocolate Chip Muffins Recipe

Paleo, gluten free, dairy free, and refined sugar free

Makes approximately 20 muffins

Ingredients:

  • Paleo Vanilla Cake and Muffin Mix
  • 6 eggs
  • 3/4 cup coconut oil
  • 1 cup honey
  • 1/2 cup water
  • 2 tablespoons pure vanilla extract
  • 1 1/2 teaspoon cinnamon
  • 1 cup of your favorite dark chocolate chips

Directions:

  1. PREHEAT oven to 350°F.
  2. Place baking cups in two standard size muffin pans.
  3. MELT coconut oil on stove top or in microwave until liquid (about 60 seconds).
  4. BLEND baking mix, cinnamon, melted coconut oil, honey, water, vanilla and eggs in large bowl at low speed until moistened (about 30 seconds). BEAT at medium speed for 2 minutes.
  5. FOLD in chocolate chips. Use a cookie scoop to fill each baking cup with batter.
  6. BAKE in oven at for 20 - 25 minutes
Baking times may vary:
  • 2 9" pans: 25-30 minutes
  • 13" x 9" pan: 30-25 minutes
  • 4 mini loaf pans: 35-40 minutes
  • 20 muffins/cupcakes: 20-25 minutes
