#Worth. As in, this paleo fudge brownie recipe is #worth the time and effort it takes to make these delicious chocolate bites of heaven. (We think that's what the kids are saying these days.) Whether you follow a paleo lifestyle by necessity or by choice, these gooey chocolatey brownies taste just as amazing as your grandma's recipe.

And yet again, our Paleo Cake & Muffin Mixes deliver on versatility. From the simple Pumpkin Mug Cake, to the fresh fall Apple Crisp, to even our Maple Pumpkin Cookies, this cake mix is second to none in the Paleo world. And we'll let you decide, but we think that this brownie recipe may one of our best creations.

 

The secret is in the cashews

Why are there soaked cashews in this recipe? The cashews allow these brownies their creamy, fudge-y texture. They are the binding that holds the batter together, keeping it from drying out and getting too crumbly. Plus, they add a hint of that nutty taste into your brownie batter which enhances the flavor.

You can add chocolate chips or chopped walnuts, if you so desire. Feel free to really make this recipe your own by adding your favorite nuts or other flavored chocolate chips. Whatever floats your boat. No judgment here!

Paleo fudge brownies [vegan recipe]

Paleo, vegan, gluten free, dairy free, and refined sugar free

Makes approximately 9 servings

Ingredients:

  • 1 cup cashews, soaked and blended
  • 1 cup Paleo Chocolate Cake and Muffin Mix
  • 2 teaspoons cocoa powder
  • 3/4 cup coconut sugar
  • 1/8 teaspoon sea salt
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon water
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • *Optional: 1/2 cup chocolate chips or 1/2 cup chopped walnuts

Directions:

  1. SOAK cashews in 1 cup very hot water for 1 hour, then blend until creamy with no chunks remaining (slowly add almond milk if too thick to blend)
  2. Using coconut oil, grease the bottom and sides of an 8x8 square baking pan and set aside.
  3. Mix Paleo Chocolate Cake & Muffin Mix, cocoa powder, coconut sugar, and sea salt in a large mixing bowl until combined.
  4. In a separate bowl, stir together the blended cashews, coconut oil, water, maple syrup, and vanilla.
  5. ADD the blended wet ingredients into the dry and stir until no dry parts remain
  6. Optional: Fold in the chocolate chips or the walnuts until evenly dispersed
  7. BAKE at 350 degrees for 20-30 minutes, or until a toothpick inserted into the center of the brownies comes out clean.
