Just add a few wet ingredients!

Simply add water, eggs, melted coconut oil, honey, and vanilla extract to create a paleo batter that can be made into a variety of delicious baked goods.

Paleo Vanilla Cake and Muffin Mix is delicious when prepared according to package directions, but it is also an excellent recipe for getting creative with flavors and mix-ins!

Optional Paleo Flavors

Add to or replace the vanilla extract in the recipe with an equal part of your favorite natural flavoring combinations. There are lots of online resources for purchasing all-natural, kosher, organic, vegan, and gluten free flavorings and extracts to enhance your paleo baking. Flavors like:

Add 1 cup of tasty mix-in ingredients to the vanilla cake and muffin batter for creative alternatives. You can also add a layer of something halfway through pour batter into cake pans or muffin cups for a secret flavor surprise.

  • Dried fruit such as blueberries, cranberries, and more.
  • Dark chocolate chips
  • Cinnamon and coconut sugar
  • Nuts like almonds, pecan and walnuts
  • Dried coconut and dark chocolate chips
  • Crumbled bacon
  • Dried sage or other spice for a savory experience

 

Toppings and Frostings

Cinnamon and coconut sugar 

Add a pinch or two of cinnamon and coconut sugar to the top of each muffin or cake before baking. This adds a delicious crunch to your paleo treat. You can also add chopped nuts to this topping if it suits your fancy.

Fresh fruit

Just before serving, add diced fresh fruit like strawberries or peaches to your cake. The flavorful fruit juices will begin to soak into your cake and create a sublimely sweet dessert experience.

Flavor Enhancers

Bakers are getting increasingly more creative with their paleo treats. Before adding wet ingredients to the dry mix, heat the water to near boiling and steep dried lavender flowers or your favorite tea. Strain out the flowers or tea and allow the now-flavored water to cool before mixing into the batter. You have created an elegant and unique flavor profile in your paleo dessert! Alternatively, you can replace the water with almond milk or another alternative milk before heating and steeping.
