Paleo Butternut Pasta Sauce with Spicy Sausage

This is a paleo meal fit for a celebration. You will impress your guests with your culinary prowess with this meal!  That said, this incredible delicacy would be perfect on a quiet night at home in your PJs.  It's just darn great comfort food.  Don't take my word for it, the pictures speak for themselves!

 

Paleo Butternut Pasta Sauce with Spicy Sausage

Ingredients:

  • 1 medium butternut squash (to make 1 cup butternut puree)
  • 1 small onion, minced (about 1/4 cup)
  • 1 lb. spicy italian ground pork
  • 5 cloves garlic, minced
  • 2 cups loosely packed, fresh spinach
  • 5-6 fresh sage leaves, chopped
  • 1 cup water
  • sea salt and pepper, to taste
  • paleo pasta of choice (zucchini, carrots, spaghetti squash, etc.)
  • parmesan cheese garnish (optional)

Directions:

  1. Beforehand: Slice butternut squash lengthwise, remove seeds, and place cut side down on a baking sheet. Roast in a 400 degree oven for 30 minutes until fork-tender.  Use a spoon to scoop out butternut flesh.  Process in a food processor or blender with 1/2 cup water to make a smooth puree. 
  2. In a saute pan, brown spicy italian ground pork on medium-high heat until cooked through.
  3. Turn heat to medium and add minced onion and garlic, stirring regularly to prevent burning. 
  4. Add spinach, sage leaves, 1 cup butternut puree and 1 cup of water.  Cook until spinach is wilted, about 2 mins.
  5. Season with sea salt and pepper to taste. (I used 1/2 tsp sea salt and 5 good grinds of fresh cracked black pepper).
  6. Serve hot over zucchini noodles (or other vegetable noodle of choice).
  7. Optional: garnish with ribbons of hard parmesan or pecorino romano cheese.
