Paleo Recipe: Deviled Eggs

Just in time for your Easter celebration! Awesome as an appetizer and a great protein-packed snack, these paleo deviled eggs are a zippy, satisfying treat!

Ingredients:

  • 8 eggs, hard boiled
  • 2 medium ripe avocados, peeled and large seeds removed
  • Juice from 1/2 fresh lemon
  • 1 teaspoon hot sauce (I like Franks)
  • salt to taste

Directions:

  1. Peel and slice hard boiled eggs lengthwise and remove yellow yolks.  
  2. Using a food processor or blender, puree yolks, avocados, lemon juice, hot sauce and salt until smooth.
  3. Transfer avocado mixture into a pastry bag or a gallon plastic bag with one corner snipped off.
  4. Pipe filling into eggs and serve chilled. 
  5. Enjoy!
